4 each boneless chicken -- with skin attached
4 tablespoons pesto sauce -- your own or fav brand
4 tablespoons diced tomato
4 tablespoons diced onion
1 teaspoon dried italian seasoning
1/2 teaspoon garlic powder
2 ounces mozzarella cheese -- cut into 4 slices
1/2 teaspoon salt and pepper -- each
2 tablespoons olive oil
How To Prepare:
Preheat oven to 350f. Spray a casserole or cake pan with cooking spray.
Spread 1 T pesto under the skin of each breast, the season liberally with remining seasonings. Place in prepared pan, skin side up, and rub with olive oil. Bake at 350 for 30 minutes. (At this point, the meat should be just almost done). Remove and place 1T each of the onion and tomato on each breast, topped by 1 slice cheese each. Place back in oven and let cook an additional 10-15 minutes or until cheese melts. You may want to cover if you desire the onions and tomatoes to be cooked instead of warmed.
