2 skinless boneless chicken breast
2 cups Classico's Four Cheese Pasta Sauce -- (7 carbs)
8 pepperoni slices
2 slices monterey jack cheese -- or mozzerella
1 cup shredded mozzarella cheese -- i prefer mozzerella
4 slices bacon
How To Prepare:
Preheat oven to 350 degrees. Cook bacon in a nonstick skillet over medium heat until thoroughly cooked, lay aside (Don't let bacon get crunchy though!). Place chicken breasts in skillet along with bacon grease and sear on both sides. In a shallow baking dish, spoon 1 cup of pasta sauce on bottom of baking dish. Place chicken breasts on top of sauce and top with pepperoni (4 slices per chicken breast) then top with sliced cheese. Cut the slices of bacon into two's and lay four slices of bacon on each piece of chicken covering the pepperoni and cheese. Take the remainder of the pasta sauce and spoon over the chicken. Bake chicken in oven at 350 degrees for about 30 to 45 minutes (time is based on how big chicken breasts are). After time is up, remove chicken and sprinkle with shredded cheese (any kind will do just fine - I prefer mozzerella). Pop back into the oven till cheese melts and "VOILA" - the best tasting chicken dish you will ever have.
