1 large chicken breast
1 large egg
1/3 cup coarsely crushed pork rinds
3 tbs Lousiana hot sauce
1 ounce waterchestnut -- chopped
1 green pepper -- chopped
1 teaspoon dried red pepper
1 ounce peanuts -- chopped
salt and pepper
How To Prepare:
Take your chicken, and chop it up into small bite size pieces. put it in a bowl with your egg and stir. add in the crushed pork rinds, and saturate. Next, toss in the rest of the ingredients, and cook in HOT wok (or pan) with
4 tbs oil (I use plain 'ole vegetable oil). Serve hot. If you love spicy foods like I do, grab some more of that Lousiana hot sauce...no carbs, since it's mostly vinegar! Enjoy!
