2 large chicken breasts -- cubed
1 sweet red pepper -- cut into large chunks
1/2 onion -- diced
1 can diced tomatoes
1 garlic clove
How To Prepare:
Sautee chicken in a little olive oil. Set aside. Sauted onions, galic, and sweet pepper in a little olive oil (we like our peppers a little crunchy). Add chicken and tomatoes, and heat through. Serve topped with parmesan cheeese. This serves 2 adults.
