6 chicken breast halves -- no skin or bones
1 egg -- beaten
1/2 cup protein powder -- plain
1 teaspoon guar gum
1/2 teaspoon salt and pepper -- less pepper if desired
1/2 teaspoon ground ginger
1/2 cup water
3 tablespoons lemon juice
1 green onion -- cut into small pieces
1/2 teaspoon guar gum
1/2 cup oil for frying
How To Prepare:
Cut chicken into bite size pieces. Beat egg and pour over chicken in bowl, tossing to coat. Mix powder, guar gum, salt, pepper and ginger in a bowl. Heat oil in a deep skillet. Toss chicken with seasoned powder to coat, then
fry over medium heat, turning if oil isn't deep enough, until cooked through and browned on all sides (this takes about 4 minutes total).
Meanwhile, bring water, lemon juice and onion to a simmer. Sprinkle gum over and whisk in quickly. Let simmer until thickened nicely. Drain chicken. Serve with lemon sauce on the side to dip.
You can toss the chicken with the sauce and serve cold, over a salad for a great summer dish
