2 pounds chicken -- 2-3, cutup
1/4 cup atkins bake mix -- or soy flour
1/4 cup oil
1/4 cup olive oil
1/2 cup lemon juice
1 teaspoon pepper
1/4 teaspoon hot sauce
1 clove garlic -- minced
2 tablespoons chopped onion
1 teaspoon thyme
How To Prepare:
Dredge one 2-3lb. chicken (cut up) in 1/4 C flour (I skip this step, or you can sub atkins mix or soy flour)
Put 1/4 C. oil in a baking dish. Place chicken pieces in single layer, skin side down, and bake at 400 for 30 minutes.
Mix the remaining ingredients to make dressing.
Remove chicken from oven, turn over, pour dressing over all, and bake another 30 minutes.
There will be a lot of liquid in the bottom of the pan. I serve some of the warm pan liquid on the side to moisten the chicken when serving. Very tasty! The dark meat pieces soak up more flavor usually.
I have also done this with boneless skinless breast pieces... it is good, but you would need to adjust cooking times a little this is from an old church cookbook... very yummy!
