Description:
Ingredients: 2 pork chops
1 cup shredded cabbage
1 Tablespoon Olive Oil.
Pancakes:
3 tablespoons soy flour
1/4 teaspoon salt
1/4 teaspoon sweetener
1/4 teaspoon baking
powder
1 egg
1 tablespoon heavy cream
1 tablespoon water
1 teaspoon butter
Plum Sauce:
1 table spoon baby food
(plum)
1/2 packet sweetener


How To Prepare: Start by making pancakes:
Mix egg, baking powder,
water, cream, salt and
sweetener
in small bowl. Beat
thoroughly. Add soy flour,
mix with hand mixer.
Set aside.


Plum Sauce:
Mix sweetener and plum
babyfood, set aside.


Cut pork chops into thin
strips.
Cook pork strips in 1
tablespoon olive oil
in skillet on medium heat
until cooked.
Add cabbage and saute
until cabbage just begins to
turn
translucent (I like mine
barely cooked, not mushy)


Melt butter in large skillet on
medium heat, it helps if you
wipe the excess butter off
before you drop the first
pancake.
Pour 1/2 of pancake mixture
into center of pan and swirl
until
you have a large thin
pancake. Loosen edges as
it cooks, flip once.


Place 1/2 of pork/cabbage
filling in center of pancake,
add 1/2 plum sauce
mixture, roll and eat.


I usaully get 2 stuffed
pancakes out of this recipe.
The baby food is just
pureed plums (I could only
find plums and apples) but
it beats using the food
processor everytime and it
has less sugar than Plum
sauce. Use sparingly, the
jar I found had 21 grams of
Carbs and I got 5
tablespoons out of one jar.
So I figured 4.5 per
tablespoon,
but it really makes it taste
like Mu Shu Pork!
