3 chicken breasts -- boneless, skinless
2 tablespoons lemon juice
salt and pepper -- to taste
1/2 cup plain yogurt
1/4 cup mayonnaise
1/4 cup chopped onions -- or scallions
2 tablespoons dijon mustard
1 tablespoon worcestershire sauce
1 teaspoon fresh thyme -- or 1/2 teaspoon dried
1/3 cup parmesan cheese -- grated
How To Prepare:
Preheat oven to 350. In a large glass baking dish, arrange chicken in a single layer. Drizzle with lemon juice.
Sprinkle with salt and pepper. In a small bowl, combine yogurt, mayo, onions, mustard, Worcesteshire, and thyme. Mix well and spread over chicken. Bake for 50 minutes. Drain off juices. Preheat broiler. Sprinkle cheese over chicken. Broil 4" from heat for 3 minutes or until cheese melts and browns slightly.
