Ingredients: 2 pounds meaty chicken pieces
1/2 teaspoon lime peel -- shredded
1/4 cup lime juice
1 tablespoon olive oil
2 cloves garlic -- minced
1 teaspoon ground pepper
1 teaspoon thyme -- crushed
1/4 teaspoon salt
How To Prepare: Rinse chicken, pat dry. Place chicken pieces, skin side down, on the unheated rack of a broiler pan. Broil 4 to 5 inches from heat about 20 minutes or until lightly browned. Meanwhile, for lime glaze, in a bowl stir together lime peel, lime juice, oil, garlic, salt, black pepper, and thyme. Brush chicken with lime glaze. Turn chicken and brush with more glaze. Broil for 5 to 15 minutes until no longer pink, brushing often with glaze.
