Description:
Ingredients: 2 eggs -- separated
1 cup sour cream
1 1/2 cup crushed pork rinds
2 teaspoons chives -- finely chopped
1/2 teaspoon old Bay Seafood seasoning
1/4 teaspoon salt
1 dash pepper
1 can salmon -- (14 3/4 oz) drained
(I do not remove the bones...excellent
source of calcium)
1 1/4 cups chopped almonds -- finely chopped
1 tablespoon oil -- (1 to 2)
Lemon wedges -- optional
How To Prepare: In bowl, combine the egg yolks and sour cream. Add pork skins and
seasonings.
Stir in salmon. In a mixing bowl, beat egg whites until stiff. Fold into the
salmon mixture.
Form into patties; coat with almonds. Heat oil in large skillet.
Fry patties over medium heat for 5 minutes on each side or until golden
brown.
Serve with lemon, if desired. Enjoy!
