1 large egg -- (1 to 2)
1 tablespoon butter
1 slices prepared Injera bread from "versatile
batter" recipe in recipe room -- (1 to 2)
1 tablespoon low carb salsa (Herdez or Embasa -1g for
2T) -- (1 to 2)
1 tablespoon shredded pepper jack cheese -- (1 to 2)
How To Prepare:
Heat butter in non-stick skillet and break in egg(s carefully so as not to break yolk. Sprinkle with salt and pepper if desired). Alow to cook 2 minutes, then cover and turn off heat, allowing egg(s) to finish cooking. Heat Injera in microwave for 35 seconds. Spread salsa over warm Injera and place egg on top. Sprinkle cheese over all. **Personal note: if you fry the Injera in a little corn oil, then sprinkle lightly with salt while draining, it tastes more like a tortilla.
