3 cups cauliflower
1 pound broccoli, cut into 1" pieces
1 cup mayonnaise
1/4 cup onion, finely chopped
3 tablespoons prepared horseradish
1/4 cup parmesan cheese
1/4 teaspoon salt
1 dash pepper
How To Prepare:
In a 3-quart saucepan cook cauliflower, covered, in a small amount of boiling water for 5 minutes. Add broccoli and cook 5 minutes more or until vegetables are crisp-tender. Drain.
In a small mixing bowl combine mayonnaise, onion, horseradish, parmesan, salt and pepper. In a 2-quart casserole combine vegetables and mayonnaise mixture. Bake, uncovered, in a 350 oven for 15 minutes or until heated through. NOTES : I usually use a large bag each of broccoli and cauliflower instead of the fresh for a quick side dish. It can even be finished in the microwave. 8 Servings at 5 gram of carbs, 2 gram of fiber for a net of 3 carbs per serving. Loosely based on a 9/89 recipe from Better Homes and Gardens.
