1 ham hocks
1 Pound sausage meat -- Manda's hot
2 Quarts water
1/2 Pounds Okra -- sliced
1/4 cup bacon grease
1 Bell pepper -- chopped
1 Large onion -- chopped
1 Bunch green onion -- chopped
1/2 cup chopped parsley
3 Ribs celery -- chopped
2 Cans Rotel tomatoes and chili peppers chopped -- ( I used the mild)
3 tablespoons garlic powder
Place the ham hock and ham steak in the water and simmer for one hour. In a large skillet fry the okra in the bacon grease until soft and the texture is no longer ropey. Add the bell pepper, onions, parsley, celery, and simmer for 30 minutes. Remove al
l meat from ham stock. Separate meat from ham hock and cut into tiny pieces along with ham steak. Return the cut up meat to the ham stock pot. Slice Manda's hot sausage into small pieces and add to ham stock pot. Place the vegetables in the ham stock
and the rotel tomatoes and chili peppers. Add garlic powder, cloves, seafood magic, greek seasoning, and cook over moderate heat for three hours (3 hrs.). Add shrimp and scallops 30 minutes before serving. Add the crab meat and oysters 10 minutes before s
erving. Skim off excess grease, add butter, stir in gently , and serve. Freezes beautifully.
This recipe comes out of New Orleans, Louisiana, it's the best.
Option: Rice for those not on Atkins -- however this is
great without rice
