12 ounces tuna in water, canned -- 2 cans, drained
1 1/2 cups frozen spinach -- chopped, thawed and squeezed dry
1 tablespoon mayonnaise
1/4 cup heavy cream
1/2 cup cheese -- shredded, easy melt
onion powder -- to taste
red pepper flakes -- to taste
salt -- to taste
pepper -- to taste
garlic powder -- to taste
How To Prepare:
Combine tuna and spinach and combine well. Set aside.
Mix together eggs, mayonaise,cream and spices. Whisk well. Add the
cheese and mix in.
Add the egg mixture to the tuna and spinach mixture, combining well.
Place in a smallish loaf pan, greased with cooking spray. Place in a
350 degree oven. Stir once after 15 minutes, and cook for another 20
minutes, or until the edges are browned and the mixture seems "set".
Let sit for a few minutes to cool. Cut into 2 squares and serve
immediately. These are very filling squares that hold together well, and is
plenty for a serving for two, with a side salad.
