1 can albacore tuna
1/2 cup provolone cheese -- or mozzarella
Annie's "Smokey Tomato and Porcini
Mushroom" salad dressing
1 teaspoon tomato paste -- (1 to 2)
a handful of sliced procini mushrooms
1 cloves minced garlic -- (1 to 2)
1/4 cup veg or chicken broth
How To Prepare:
Saute mushroom in olive oil over medium heat. When the mushrooms have begun to brown add garlic, oregano, and S & P to taste. Continue to saute for a few minutes. Add albacore. When the tuna begins to warm, add the tomato paste. Combine all ingredients we
ll and adding the broth(as needed)to keep tuna from drying out. Add more S&P to taste. Saute for 5-7 mintues.
Remove pan from heat and sprinkle the cheese on top of the tuna and cover(the residual heat from the pan & tuna will melt the cheese). Toss the romaine lettuce and 2 tablespoons of the dressing together in a bowl. Place the lettuce onto a plate and serve
the tuna on top. You'll love it!!
Serves 2-4 (depending on appetite!)
Great for dinners with carb eaters too- just serve on some pasta tossed in olive oil and a little tomato sauce instead of the romaine!
**(tomato paste in a tube is the most convenient choice when using small amoutns of tomato paste- it can be found with the other pastes at most local groceries)
