28 ounces salmon, canned -- 2 cans - dran well and pick out skin and bones
10 ounces frozen spinach -- chopped; thaw and drain well
2 large eggs
1 cup pork rinds -- measure, then crush
1/2 cup heavy cream
3 ounces cream cheese -- cut into cubes
1 cup cheddar cheese -- shredded and divided
1/2 teaspoon salt and pepper -- each
1 dash cayenne pepper
How To Prepare:
Preheat oven to 350f. Spray a casserole with cooking spray -heavily.
Squish everything together except 1/2 cup of the cheese. Pat salmon mixture into the casserole and bake, uncovered, for 25 minutes. Sprinkle top w/remaining cheese and bake 5 more minutes or until melted.
