3 pounds shrimp -- large, peeled & deveined
3/4 cup olive oil
1/2 cup cilantro -- finely chopped
1/4 cup white wine vinegar
3 tablespoons fresh lemon juice
jalapeno chile peppers -- seeded & minced
3 large garlic cloves
1/4 teaspoon cayenne pepper
salt and pepper -- to taste
How To Prepare:
Cook shrimp (if not pre-cooked), cool, drain and place in large bowl.
Combine all other ingredients in bowl of food processor, blend until smooth. Pour in bowl over shrimp and toss to coat. Cover and refrigerate for four hours. **These shrimp are great as an appetizer...If you are having guests over this is something you can make for yourself and other guests that is still low-carb friendly.
