Ingredients: 2 large cucumbers -- unpeeled, cut into 20 slices each
8 ounces smoked salmon
8 ounces cream cheese
1 Tablespoon lemon juice -- fresh
salt and pepper -- to taste
1 tablespoon chives -- dried, or parsley for color if desired
6 ounces caviar -- canned
How To Prepare: Put smoked salmon, cream cheese and lemon juice in processor and pules to break up and blend(you don't want a "paste").
Season with salt and pepper and stir in parsley or chives, if desired.
Spread salmon mixture on each cucumber slice.
Top with a small serving of caviar.
Can be made a day ahead -cover and keep very cold:)
**If this seems to thick, add a little sour cream or heavy cream whne processing.
