16 large shrimp -- peeled and deveined
3 jar jalapeno peppers -- seeded and cut into 16 strips
4 strips bacon
3 tablespoons olive oil
salt -- to taste
pepper -- to taste
How To Prepare:
Bring 1 cup water to a boil and drop bacon in. Blanch for 2 minutes,
drain well and pat dry.
Preheat broiler and spread 1T olive oil on the bottom of a broiler pan.
For each popper: Sprinkle raw shrimp with salt and pepper(you can use a
little paprika and garlic powder if you wish as well). Lay 1 strip
jalapeno on the shrimp where the back vein was, then wrap in 1 strip bacon,
laying shrimp on broiler pan with the bacon 'seam' down. Continue with
all shrimp. Drizzle or brush with olive oil.
Broil about 8" from heat for 3 minutes, then turn shrimp poppers(bacon
should hold it's shape and stay wrapped)and broil another 2-3 minutes
or until cooked through.
Serve as is or with melted butter w/a squeeze of lemon added.
