Ingredients: 2 large skinless boneless
chicken breasts halved
1 Clove fresh garlic
8 Ounces sliced fresh
8 Ounces shredded
mozzarella cheese
4 Slices prosciutto
Non-Stick cooking spray
How To Prepare: Pre-heat your oven to 375

Heat 4 tablespoons of extra
virgin olive oil in a medium
sized pan with 2 teaspoons
of fresh crushed garlic
cloves on a medium heat.

Add four skinless, boneless
chicken breast halves to
pan and sautee each side
until golden brown. When
the chicken is finished
remove from pan and drain
on a paper towel.

Coat a separate sautee pan
with non-stick cooking
spray and sautee 8 ounces
of fresh sliced mushrooms.
When the mushrooms are
tender remove from heat
and set aside.

Coat a shallow glass
baking dish with non-stick
cooking spray. Place
chicken in the baking dish
and place a thin slice of
proscuito on each piece of

Next spoon the sauteed
mushrooms unto each
piece of chicken. You then
top off the chicken with 8
ounces of shredded
mozzerella cheese.

Then place the baking dish
into your pre-heated oven
and bake for 5 - 8 minuted
or until the cheese is
