Description:
Ingredients: 4 each chicken breast half
-- Preferably boneless -
must have skin
4 slices orowheat light
100% whole wheat bread
2 stalks diced celery
1/4 cup diced onion
1 tablespoon butter
1 tablespoon olive oil
8 tablespoons chicken
broth
1/4 teaspoon poultry
seasoning
1/4 teaspoon salt
1 dash pepper
1/4 teaspoon garlic powder
1 each additional olive oil
and spices blend
How To Prepare: Preheat oven to 350f. Use a
baking pan that is at least
2" deep and just large
enough to hold the chicken
breasts in a single layer
snuggled together. Spray
with cooking spray and put
about 1/4 cup water or
chicken broth in the bottom.


Loosen chicken skin but
don't remove. Set aside.
SautŽ onion and celery in
butter and olive oil until soft.
Set aside.


Cut each slice of bread in
1/2. Use a dish just large
enough to hold 2 of the cut
pieces (1 slice)
side-by-side. Put 1T of the
broth in the dish spread out
then put the bread in it so it
gets just moistened on one
side. Remove bread, add
another T of the broth and
repeat on the other side. Do
this with all the bread.


Mix the spices in a small
bowl or baggie.


To assemble: place 1 piece
of bread down and put 1/4
of the sautŽed celery and
onion on it then top with
another piece of bread.
Sprinkle a pinch of the
spices on top of the
'sandwich' and gently place
under the loosened chicken
breast skin. Pull skin back
down so the 'stuffing' is
enclosed. Repeat with all
the chicken. Rub the skin
with a teaspoon or so of
olive oil then sprinkle with
the additional spice blend.
Place in the prepared pan
and bake, uncovered, for
about 45 minutes to 1 hour
or until chicken is cooked
through.


*If using boneless chicken,
bake about 35 minutes
total.
