Ingredients: 2 tablespoons olive oil
1 cup diced onion
1 cup zucchini -- diced
1/2 cup green pepper --
8 large eggs -- beaten
1/4 cup heavy cream
2 teaspoons dried basil
1 each salt and pepper -- (I
use about 1/2tsp ea)
1/2 cup parmesan cheese
-- grated
How To Prepare: Preheat the broiler. In a
large nonstick skillet that
can go under the broiler,
heat oil. Add in the onions,
peppers and zucchini and
cook, stiring constantly, 5
minutes or until they're
starting to soften. Add 1/2
cup of water and cover and
let simmer 5 more minutes
or until cooked to desired
tenderness. Remove cover
and raise heat. Beat the
eggs, salt, pepper and basil
together. Pour into skillet
over vegetables and tilt pan
to get even coverage.
Reduce the heat to low and
cook 10-12 minutes, until
the underside is set. Broil
the frittata 1-1 1/2 minutes,
until the top is set and a
light crust is formed. Slide
the frittata onto a large plate
or platter; sprinkle with the
Carbs per serving - include all nutritional information if known: 33g total
