Ingredients: -4 zucchini chopped
-1 green pepper chopped
-1 large onion chopped
-2/3 cup (appprox) artichoke hearts
-120 pistachios
-4 Tablespoons grated cheese

4 Tablespoons olive oil
-1 heaping Tablespoon jarred garlic or use fresh
-Fresh grated nutmeg (about 1/4 tsp or to taste)
-oregano & basil to taste
-salt and pepper to taste

350 degree oven
How To Prepare: Process pistachios, oil, garlic, nutmeg, spices etc until fine. Mix with chopped veggies and place in large shallow baking pan that you have coated with spray. (I use olive oil spray)

Sprinkle with cheese, bake

I also added a dash of Shiraz (you can use Merlot or your fav wine)

Next time I'm going to mix the cheese in the processed mixture and see what happens.

I think capers would also be great in this.
