20 ounces frozen spinach -- thawed and drained
2/3 cup frozen onions -- diced
1 cup sliced mushroom
3 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup heavy cream -- if desired
1/4 cup grated parmesan cheese -- if desired
1/4 cup water
How To Prepare:
Heat oil in a fairly large skillet. Add onions and mushrooms and saute for about 5 minutes or until musrooms start to wilt. Add spinach, seasonings and water. Cover and reduce heat to low. Let simmer, stiring occasionally, for 10 minutes or until the wate
r is absorbed. Stir in the cream, if desired, and heat through. Top with the grated parmesan and let warm before serving.
