This recipe was excellent. I didn't have any pork rinds so I covered the top with cheese. Even my non-veggie eating husband liked it. I will make this again.

Shirley, what a nice recipe. We really enjoyed it. I served it as a side dish, but could easily be a vegetarian main dish... thinking ahead for Lent. The way I prepared it, with the 2 eggs, it didn't quite cover the squash to my liking, so I beat another egg and added it in. This provided 4 good sized servings or 8 small servings. Re-heats well in micro the next day. I believe the carbcount is lower due to the fiber in the squash. Will be making this again, as this one is a keeper. THX!

I used,NO onion,and 2 XL eggs,otherwise followed recipe as stated.We both liked it and it almost tasted like cream corn (in a good way)
