2 cups yellow squash -- sliced, cooked and drained
1 small chopped onion -- optional
3 tablespoons melted butter
2 tablespoons Heavy Cream
2 eggs -- beaten
1/2 cup grated cheddar cheese
salt and pepper -- to taste
1/2 cup crushed pork rinds
How To Prepare:
Combine ingredients: Place in a 1 qt casserole. Cover top with pork rind crumbs.
Bake uncovered at 325 for 30 min or til bubbly. Serves 4-6
