20 ounces spinach, frozen
1/4 cup minced onion -- To reduce carb count use onion powder to taste
2 cloves garlic -- or use powder
1/2 cup butter -- melted
1/2 cup cream cheese
1 cup sour cream
1/4 cup artichoke hearts
salt and pepper -- to taste
How To Prepare:
Thaw spinach and squeeze dry. (If you are going to use garlic and onion
powder add to spinach with 1/2 cup of melted butter). If you want to use
fresh onion and garlic saute in 1/2 cup butter, add to spinach. Mix in the
rest of the ingredients and add one tsp. of lemon juice if desired. Lemon
juice not figured into carb count. Pour into buttered casserole dish and
bake at 350 for approx. 35 to 40 min.
If you want to make a dip then you could saute the spinach and artichokes in
butter with onion and garlic or add powder. Then mix with the rest of the
ingredients in a bowl and eat with veggies.
I am lucky to get this recipe from my sister Mimi. She never writes down her
recipes, Mimi just whips them out and laughs. My mother taught us the pinch
and dash method of cooking. She would say "girls just use you head".
