2 tablespoons water
1 teaspoon salt
2 pounds yellow squash -- coarsely chopped
1 pound zucchini -- coarsely chopped
1 onion -- coarsely chopped
4 ounces California Jack Pepper cheese -- shredded (about 1cup)
1/2 cup half and half
How To Prepare:
Combine water and 5 ingredients ia a saucepan: cook, covered, over low
heat until veggies are very soft, about 20 min., stirring occasionally.
Drain well. In a buttered 8"x8" baking pan or smaller ramekins layer
halft the squash, cheese and repeat, then pour half and half over top.
Bake at 350 until cheese melts and top begins to brown, about 30min.
