Description:
Ingredients: 2 zucchini -- small.medium, green
3 tablespoons olive oil
1 clove garlic -- large, sliced
kosher salt -- fresh ground pepper
Parmesan cheese-freshly grated
How To Prepare: Preheat oven to 400. Pour oil into glass pan, add garlic slices, place in oven for 5 min. Cut zuchinni lengthwise in half, sprinkle with salt and lots of pepper, place cut side down in pan. Roast 10min or so, turn over and sprinkle with Parmesan chees
e. Bake 5 min or until cheese is lightly browned.

Positive aspects of the product (pros): nice addition to any meal
Cons:

I let the zucchini soak in the oil/garlic mixture for about a half hour prior to baking. The extra flavor really gave it some zing. I also used percorino romano cheese instead of the parmesan. I gave it a quick browning under the broiler at the end. It tastes more like a snack than yet another vegie your forced to eat.

Positive aspects of the product (pros): nice flavor, quick and easy to prepare
Cons: be careful your zucchini aren't too large. mine took a little longer to cook.

Positive aspects of the product (pros): This is a delicious hot vegetable side dish.
Cons: None

This recipe is a nice change for a side dish especially when you have become tired of the usual green salad or steamed vegetables. Easy to make and flavorful.
