Ingredients: For the dressing:
6 tablespoons ranch salad
4 tablespoons salsa --
herdez and embassa
brands are low-carb
For the chicken:
4 boneless skinless
chicken breast
2 tablespoons olive oil
2 tablespoons lime juice
2 teaspoons chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 dash cayenne pepper
The salad:
4 cups romaine lettuce --
shredded or cut in chunks
4 tablespoons grated
parmesan cheese
4 tablespoons monterey
pepper- jack cheese
How To Prepare: Dressing: Mix ranch
dressing and salsa
together and let sit 15-20
minutes to meld.

Chicken: Mix all ingredients
for chicken and then rub
into chicken. Let marinate
10-15 minutes before
grilling. Grill: 10 minutes on
preheated foreman grill.

To make: Drizzle about 1/2
the dressing on the lettuce
and toss. Divide among 4
plates. Sprinkle on parm
cheese, then lay sliced
chicken breast on top. Top
warm ckn w/jack cheese.
