Peel two ripe avocados.
Remove the pit. Mash with a
fork into small chunks.
Dice half a small tomato.
Chop up a slice of sweet
onion (I used a 1015).
Combine. Add about a
teaspoon of lemon juice.
Stir it up a little. Spoon it
over a bed of mixed
greens, and enjoy with crisp
