2 medium zucchini -- 8 " long, sliced into 12 slices each
OR 2 cups sliced okra(about 1/2" slices)
1/2 cup protein powder -- plain, soy
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne
1/2 teaspoon garlic powder -- mixed well with 3 tbl water
1 large egg
Oil for frying
How To Prepare:
Toss sliced veggie with egg/water mixture. Mix powder and seasonings and put in a big zipper bag. Using hands, "drain" veggies of egg and water and toss into zipper bag w/seasoned protein powder. Seal bag and shake vigirously to coat each piece well.
Heat oil over medium heat(about 3/4" of oil is plenty). Drop a drop of water into oil -if it 'dances' the oil is hot enough.
Place a single layer of coated veggies in hot oil and allow to brown (about 1 minute with soy powder), then turn and brown on other side.
Place on paper towel to drain while you fry the rest.
**You can fry cauliflower this way, too -and it is excellent:)
