Jeff Law Delicious Yellow Squash Casserole Reviews Date of last review 4 Fri June 15, 2007 Recommended By Average Price Average Rating 100% of reviewers None indicated 9.5 Description: Ingredients: 4 yellow squash -- (4 to 6) 1 large tomatoes 1 large white onion 3 strips bacon -- (3 to 4) 1/2 block sharp cheddar cheese (enough to cover top of casserole) How To Prepare: (note: scale quantities to your casserole dish) In 9 by 13" casserole dish, begin by slicing the squash into 1/4" slices. Add enough to cover the bottom of the dish about 2 slices deep. Next, slice the white onion and layer on top of the squash. Do the same with the sliced tomato. Finish by placing a slice of cheddar on top of each tomato, then topping off the dish with the raw bacon slices. Bake in a 350 degree over for about 1 hour or until the bacon on top is done. (important - don't add any liquid to the recipe. The veggies will generate plenty of juice on their own.) Yes | Price you paid?: None indicated | Rating: 8    Positive aspects of the product (pros): easy to make, 5 out of 5 liked it Cons: none My mom prefered less onion but my aunt wanted more, so adjust to family taste. I added salt to mine. It was a nice change from plain squash.

Yes | Price you paid?: None indicated | Rating: 10    Positive aspects of the product (pros): Easy, absolutely delicious, and different from other recipes Cons: Ok, at first I thought the recipe sounded boring. I mean, just layer some plain veggies and bake? But, I had some fresh produce so I tried it. WOW! Now I make a batch every Sunday and eat it for lunch during the week. Somehow the flavors work together to make a really filling and addicting dish. I admit, I add a teeny bit of cream because I'm a cream freak. And, it tastes ever better reheated. My only suggestion - don't use shredded cheese, it cooks too fast. Use brick cheese just as the recipe says.
