My mom prefered less onion but my aunt wanted more, so adjust to family taste. I added salt to mine. It was a nice change from plain squash.

Ok, at first I thought the recipe sounded boring. I mean, just layer some plain veggies and bake? But, I had some fresh produce so I tried it. WOW! Now I make a batch every Sunday and eat it for lunch during the week. Somehow the flavors work together to make a really filling and addicting dish. I admit, I add a teeny bit of cream because I'm a cream freak. And, it tastes ever better reheated. My only suggestion - don't use shredded cheese, it cooks too fast. Use brick cheese just as the recipe says.
