2 cups shredded sharp cheddar
2 cups shredded monterey jack
1 can chopped jalapenos
6 oz. whipping cream
How To Prepare:
Combine the four cups of
shredded cheeses and blend
well. Spray an 8 inch square pan
with cooking spray or olive oil.
Place half of the shredded
cheese in the pan. Sprinkle first
layer of cheese with chopped
jalapenos to taste. Canned
chopped green chiles could be
substituted if you are faint of
heart or wimpy of tongue. Top
with the remaining 2 cups of
cheese. Wisk the eggs and
whipping cream together until
smooth (I like to pour in a little of
the juice from the jalapenos).
Pour egg mixture over the
cheese, and sprinkle with
additional jalapenos if desired.
Bake at 350 for 25 minutes,
turning on broiler for the last 2-3
minutes to brown. Let cool for 15
minutes, and cut into 2" squares.
Best consumed with a frosty cold
