Ingredients: 14 ounces artichoke hearts -- 1 14 oz can - usually 6 - 8 per can
1/2 cup mayonnaise
1/2 cup shredded mozzarella cheese
1 tablespoon grated parmesan cheese -- or romano
chopped parsley
How To Prepare: Thoroughly drain artichokes and pat dry on a paper towel. Cut eachinto quarters. Arrange artichokes in an 8-inch round baking dish.Combine mayo, mozzarella and hard cheese (Parm or Romano).
Spread overartichokes. Sprinkle w/paprika. Bake at 325 for 15 to 18 minutes untiledges are brown. Sprinkle with chopped parsley.

Cons: Don't think the carb count is right

This was very easy, rich and yummy. However, there were no carbs in the mayo or cheese I used, so the only carbs came from the artichokes, and my whole can was only 20 carbs - so even if you do the .6 rule for the amounts of mayo and cheese, it is still about only half what is posted. Also, this doesn't make very much so I think I will double the recipe next time. It is very good.

Cons: Carb count is off.

I modified this recipe slightly. I used freshly grated parmasean and used twice the amount. I also added some freshly ground black pepper. Finally, after spreading the cheese mixture and before sprinkling the paprika, I grated a little more fresh parmasean over the top. Then, after baking for 15 minutes, I put it under the broiler for 2 minutes. Even my husband who isn't THAT fond of artichokes really, really loved this dish!
