Ingredients: 2 pounds cooked chicken
breast halves -- 1" julienne
1/2 cup Greek olives --
1/2 cup Red Onions --
1/2 cup red bell pepper --
roasted, julienne
4 ounces Feta Cheese --
2 cups Spinach -- wide
2 ounces lemon juice
2 ounces olive oil
2 cloves garlic -- chopped
1 tablespoon fresh basil --
1 tablespoon fresh parsley
-- chopped
1 tablespoon fresh oregano
-- chopped
Salt and pepper -- to taste

How To Prepare: Put the chicken in large
mixing bowl and mix in the
remaining ingredients
except for the dressing.
Make the dressing by
whisking together the
lemon juice, oil, garlic,
herbs, salt and pepper.
Toss with the chicken
