Description:
Ingredients: 1 tablespoon olive oil
3 cups eggplant --
peeled,cubed
1/2 cup diced onion
1/2 cup diced green bell
pepper
2 cloves garlic -- diced
1/2 cup diced tomato
2 tablespoons red wine
vinegar
2 tablespoons parsley --
fresh, diced
salt and pepper to taste
How To Prepare: Heat oil over medium heat.
Add eggplant, onion,
peppers and garlic. Cook,
stirring till eggplant is
tender and begins to brown.
Put it in a bowl and add rest
of ingredients. Mix well.
Chill overnight.
Number of Servings: 6
Carbs per serving - include all nutritional information if known: 5.83g
