1/2 pound bacon
1 large egg -- hard boiled and chopped
3 tablespoons lemon juice
1 teaspoon dijon mustard
1/4 teaspoon salt and pepper -- each
1/3 cup olive oil
6 cups fresh spinach -- torn into bite size pieces
3 each green onion -- sliced
4 tablespoons grated parmesan cheese
How To Prepare:
Fry bacon until crisp. Cool, then crumble. Blend the lemon juice,mustard, salt and pepper until smooth. Add the oil in a slow steady stream to emulsify. Put everything except parmesan and bacon into a bowl and toss with the dressing. Divide among 4 plates and sprinkle with the cheese and bacon.
