2 cups spinach -- fresh, remove stems
3 mushroom -- large, sliced
1/2 tomato -- sliced and quartered
4 Slices bacon -- (4 to 5) (Fried Crisp & retain 3 Tablespoons of the fat
2 tablespoons red wine vinegar
1 package artificial sweetener
How To Prepare:
Put 1st three ingredients in bowl. In glass bowl or measuring cup mix the vinegar and Splenda, then add the bacon fat drippings and mix well. Pour over salad. Crumble bacon and sprinkle on salad. Serve.
Note* If you have carbs to spare, this is good with feta or bleu cheese sprinkled in the salad too.
