Ingredients:

2 cups flax meal
1 cup Carb Solutions
chocolate protein powder
8 tablespoons canola oil
4 large eggs
1 cup splenda -- in bulk
form
4 teaspoons baking powder
6 teaspoons imitation
coconut extract
1 teaspoon salt
2 cups water
1 cup pecan pieces --
chips, Fischer's
1/2 cup unsweetened
coconut meat -- fresh
grated coconut
(or you can used packaged
as long as it doesn't have
any sugar)

How To Prepare:

Preheat oven to 350F
degrees. Mix together all
above ingredients. Divide
evenly into 24 muffin cups
that have been sprayed
thoroughly with cooking
spray (like Pam). Bake for
45 minutes. Turn out onto
rack to cool. 24 muffins.
NOTES : Counts for protein
powder and coconut extract
not included in totals.
