Ingredients: 1 head Cauliflower cut into bite-size pieces

1 cup Mayo (or less if small head)
2-3 Tbls. Dijon Mustard
2 Tbls. minced onion
Salt & Pepper (to taste)
1 C. shredded Cheese (yellow: cheddar, colby, etc.)
How To Prepare: Microwave Cauliflower with 1/4 C. water in microwave-safe dish with lid until tender (don't overcook). Usually 5 min. does it.

Meanwhile, in bowl combine mayo, mustard, s&p and onion.

Thoroughly drain cauliflower and return to microwave dish. Spoon the sauce over the florets getting each one. (Don't stir!) Next top with cheese. (Don't stir!)

Return to microwave for another 2 min.

This is a big hit with the kids! Great meat accompaniment.
