Ingredients: 15 medium mushrooms
1 package cream cheese
1/4 cup bacon bits
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
grated cheddar cheese
salt and pepper -- optional
How To Prepare: Remove stems from mushrooms by gently pulling, set caps aside. Chop stems and saute in butter with garlic and onion powder. Soften cream cheese then add sauted stems and bacon bits and mix well.
Turn mushroom caps upside down on cookie sheet and stuff mixture into caps. Top with a little grated cheddar cheese. Bake in 350 degree oven for 20 minutes. Great as a side dish or snack. They warm up great in microwave and taste good cold.

NOTES : Total includes 6 carbs for bacon bits - check your brand and adjust accordingly.

Very good! Made these last night. Hubby liked them too! Wasn't sure how much butter to use (used 1/4 of a stick)or how long to saute but it turned out great!

I've made this a few times. I onced used bacon bits and I was dissapointed with the dish. The last time I made it I omitted the bacon and it was perfect!. I sauteed a minced shallot with the chopped stems in some olive oil til soft. Added it to the cream cheese with scallion and spices as above. I used baby bella mushrooms. I scoop out the gills and stuff it woth the mixture. I baked for about 15 min. Then I sprinkle the cheese on for the last 5 min of cooking. DELICIOUS! Be careful, the cream cheese is HOT when it comes out of the oven and can burn your mouth, I learned this the hard way! Exceelent dish!
