Ingredients:
|
3 eggs -- separated
1/4 teaspoon cream of
tartar
3 tablespoons cottage
cheese -- small curd
1 package artificial
sweetener
1 dash salt
2 ounces shredded
cheddar cheese
1 tablespoon minced
pickled jalapeno pepper
(1g)

How To Prepare:
|
Preheat oven to 300f. Spray
a large, non-stick cookie
sheet with
cooking spray.
Beat whites and tartar until
very stiff.
In a separate bowl, beat
egg youls with cottage
cheese, sweetener and
salt. Mix in cheese and
jalapeno by hand.
Pour over beaten whites
and fold quickly and gently
into whites.
Place 6 mounds on the
prepared cookie sheet.
Bake in 300f oven for
approx 40-50 minutes or
until nicely browned.
(Avoid opening oven door
for 30 minutes to help keep
falling to a minimum).
Let cool completely before
storing.
**I have also used 3T sour
cream or ricotta in place of
the cottage
cheese with no problem.
Personal note: you can add
1-2 more pkts sweetener
and 1/2 tsp extract
of choice to yolk mixture and
have a sweet variation.
Leaving out
jalapenos and cheese, of
course);)
NOTES : Counts for pickled
jalapeno pepper not
included - adjust
accordingly.
