After trying numerous pancake recipes, I was giving up on good pancakes until I came across this one. Couldn't find strawberry seltzer, but used raspberry seltzer. Absolutely delicious. Only got 7 pancakes and, because I make them ahead of time and freeze them in packages of 3, I doubled the recipe. Thx Kat. Keep them coming.

Followed directions exactly as posted. The batter turned out like soup... it wasn't the thick batter I used to get in boxed mixes (pre-Atkins).
I tried using the batter anyway to make the pancakes in my Perfect Pancake. It started to cook nicely, but then stuck to the bottom and wouldn't flip to the other side, despite my spraying the Perfect Pancake thoroughly before.
I finally stirred it around on the one side - like I was making scrambled eggs - and got something that similarly resembled scrambled eggs.
The taste was pretty bland, and the soy was detected by my taste buds.
I do not recommend this recipe.
