NoelsCat Kat's Strawberry Flapjacks Reviews Date of last review 3 Sat October 2, 2004 Recommended By Average Price Average Rating 67% of reviewers None indicated 7.3 Description: Ingredients: 1/2 cup soy protein powder or low-carb flour -- I use Extreme low carb flour from lowcarbnexus.com 1/2 teaspoon cinnamon 2 packets artificial sweetener -- (2 to 3) 1 egg 1 egg white 2 tablespoons heavy cream 1/2 teaspoon vanilla 3/4 cup strawberry seltzer water (sugar free - carb free) How To Prepare: Mix protein powder or low-carb flour, cinnamon and artificial sweetener. Set aside. Beat together egg, egg white, cream, vanilla. Add to dry mixture. Add seltzer water. Blend with a whisk until there are no lumps and the batter is creamy. Drop batter onto hot buttered skillet one at a time with 1/4 cup as a guide. Makes about 10 pancakes and 3 is a serving. enjoy! I have been working on creating a good low carb pancake for quite some time...and I really think I have found something to satisfy my pancake longing! They are so much like a real pancake; it's awesome! Plus, they are sweet and flavorful so you probably won't need any syrup at all! Thanks to everyone's recipes on here that gave me inspiration... Yes | Price you paid?: None indicated | Rating: 10    Positive aspects of the product (pros): Light and fluffy w/no soy after taste Cons: none After trying numerous pancake recipes, I was giving up on good pancakes until I came across this one. Couldn't find strawberry seltzer, but used raspberry seltzer. Absolutely delicious. Only got 7 pancakes and, because I make them ahead of time and freeze them in packages of 3, I doubled the recipe. Thx Kat. Keep them coming.

The batter turned out like soup... it wasn't the thick batter I used to get in boxed mixes (pre-Atkins). I tried using the batter anyway to make the pancakes in my Perfect Pancake. It started to cook nicely, but then stuck to the bottom and wouldn't flip to the other side, despite my spraying the Perfect Pancake thoroughly before. I finally stirred it around on the one side - like I was making scrambled eggs - and got something that similarly resembled scrambled eggs. The taste was pretty bland, and the soy was detected by my taste buds. I do not recommend this recipe.
