How To Prepare: Preheat over to 310¼,
Separate 12 eggs, and
discard 3 yokes. Put egg
whites back in fridge to stay
cool (if you donāt these will
come out very flat and weird

In a plastic bowl (donāt use
metal it think it reacts weird
to the yeast). mix:
~ 9 egg yokes (I feed the
other 3 to my dogs)
~ 1 packet rapid rise yeast
(packets have 0 carbs, the
solid has carbs)
~ 3/4 cup whipped cottage
~ 1/2 tablespoon splenda

Put into a warm water bath
for about 5 minutes until
you can smell the yeast in
the mixture, and then add:
~ 1.5 scoops 0 carb soy
protein isolate (NOT shake
(Mixture is very thick but
yeast will break it down to
about the consistency or a
thick pancake mixture). Set
mixture aside.

Line 2 large cookie sheets
with parchment paper and
spray with Pam.

Now mix these next
ingredients in a large
4-quart mixer bowl:
~ 12 chilled eggs whites
~ 1 tablespoon cream of
~ 2 tablespoons powdered
~ Sprinkle of seasoning salt
Beat until meringue is ultra
super still & dry. If you donāt
do it long enough rolls will
not turn out. I have
Kitchenaid stand mixer and
it takes 10 minutes in that,
so a hand mixer may be up
to 20 minutes.

Now fold in the egg yoke
and yeast mixture, be
careful not deflate
meringue. Spoon out onto
parchment paper in 2.5"
high mounds about size of
a hamburger bun. You can
make them round or
rectangular for hotdogs

Bake in 310¼ over for 30
minutes and than swap
trays, top one to bottom and
bottom one to top for an
additional 30 minutes; they
should be dry on the inside.
You may need to back a
little longer or a little less.

After cooled I seal in a
Rubbermaid container and
they take on a softer
consistency. These are
yummy and the best ones I
have made yet. They taste
like Italian bread.
