1 loaf carbo-lite bread mix
1 package dry yeast
1 cup warm water
6 tablespoons olive oil -- divided
3 cloves garlic -- 1 clove minced very fine
2 cups chopped tomato
1 tablespoon dried italian seasoning
1/2 teaspoon salt and pepper -- each
1/4 cup chopped onion -- finely chopped
2 tablespoons red wine vinegar -- if desired
How To Prepare:
Mix bread mix with warm water and yeast and let bread machine mix dough. Remove and cut into 2 equal sections. Roll into 12" long baguettes and place 3" apart on a cookie sheet that has been sprayed with cooking spray. Set in a warm, draft free place to rise for 2 hours -undisturbed. Spray loaves lightly with butter cooking spray OR mist with water. Bake in a 350 oven for approx 25-23 minutes or until golden brown. Let cool completely or a rack so air circulates all the way around(better if it is made a day ahead of time and NOT covered or refrigerated).
Mix tomato, 2T olive oil, italian seasoning, salt, pepper, vinegar(if using), minced garlic, and onion together and let sit for 20-30 minutes before assembly.
To make crostini: Slice baguettes into 24 - 1" slices. Drizzle both sides lightly with olive oil(if you have a mister - even better). Heat grill pan or non-stick skillet over med heat and cook each slice until golden brown, flip and cook on other side. As soon as it's removed, rub with raw garlic clove. Top w/tomato mixture and serve.
