Ingredients: 3 eggs
3/4 cup heavy cream
3/4 cup water
1 cup cottage cheese
1/2 cup artificial sweetener
1 teaspoon vanilla
cinnamon -- to taste
How To Prepare: Place all ingredients into a
mixing bowl and blend
several minutes
until as smooth as
possible. Pour into a 8X8
buttered casserole dish
and bake at
350 degrees for about
30-35 minutes or until well
browned on the top. The
texture is so much like
bread pudding that it is
bizzare--also makes
the house smell awesome.
NOTES : Counts for
cinnamon not included in
Carbs per serving - include all nutritional information if known: 28g carbs total

Positive aspects of the product (pros): Tastey/texture is similar to rice pudding
Cons: little after-taste from sweetener

I was unsure of the amount of sweetener to use as I didn't have liquid so I guessed and used 5 packets of sweet and low. It left a little bit of after taste but I topped the pudding with a couple of teaspoons of plain yogurt and it was delicious for breakfast or for a snack.

Positive aspects of the product (pros): quick and easy
Cons: addicting!

This is delicious! One reviewer said she used packets of sweetner, but you really need to use the bulk, measurable sweetner (I used Splenda).I also used a stick blender to prevent any clumps from the cottage cheese and it turned out perfectly. I think you should give this one a try, it is a nice change of pace for dessert or breakfast or snack time..! Yumm-o!
