Ingredients: 1 pound pork sausage -- any flavor
2 tablespoons chopped onions
8 ounces cream cheese
1 can Rotel tomatoes (you choose how hot!)
How To Prepare: Brown the sausage and onions in a medium high heat skillet. Break up the sausage into little bits while it is browning. Drain the excess grease (if it is especially greasy, degrease by placing the meat in a colander and briefly rinsing it with HOT running water). Return the sausage and onions to the skillet and add the block of cream cheese. Heat over medium heat until the cheese has melted and stir in the tomatoes. Reduce the heat to low and simmer for about 15 minutes or until the mixture thickens. Serve warm (I actually like it cold too). This is highly addictive and fantastic with pork rinds and celery. Great for parties or just for keeping in the fridge for a quickie snack. I love the double strength heat when I use "hot" sausage and "hot" rotels (and it lasts longer because I take smaller bites!)

NOTES : Counts for Rotel tomatoes not included in totals.

Positive aspects of the product (pros): Extremely easy to make
Cons: Hard not to eat all of it at once

I love this recipe. I don't use onions, and I use original Rotel (can't take the hot stuff) with Jimmy Dean Sage flavor sausage. Sooooo yum. Very addictive. I'm new to the low carb lifestyle and this is my favorite disk so far. I eat it on celery.
