Ingredients: crust:
1 cup almonds
1/2 cup coconut
1/4 cup Splenda
1/4 cup melted butter

1 cup whipped cream
16 ounces cream cheese --
1/3 cup Splenda
1/2 teaspoon coconut

How To Prepare: Crust: Grind almonds in
food processor until like
coarse cornmeal. Add
coconut & Splenda and
pulse until combined. Add
melted butter and process
until it begins to clump.
Press into 9" pie plate.
Bake at 350 for 10-15 min.
until lightly browned. Cool
before filling.

Filling: Beat cream cheese
and Splenda until fluffy. Add
coconut extract. Gently stir
in whipped cream. Pour into
pie shell and chill for 3
NOTES : Counts for coconut
extract not included in
