Ingredients: 1 cup fresh or thawed
frozen berries (see below)
8 ounces cream cheese --
1/2 cup mayonnaise -- (may
use sour cream but will add
to carbs)
1 tablespoon grated lemon
1 cup heavy whipping
2 packets artificial

How To Prepare: Blend cream cheese,
mayonnaise, and lemon
peel, together. Whip the
cream and sweetener until
stiff. Fold the whipped
cream into the cream
cheese mixture. Carefully
fold the berries into the
combined mixture. Line a
small loaf pan with waxed
paper and spoon the
mixture into the loaf pan.
Freeze until firm (at least 4
hours). Unmold and slice
into 12 slices.

If you can handle a few extra
carbs, try adding chopped
almonds or pecans. Make
sure to measure what you
add, so you can figure out
the carb count! Also, this is
much better if eaten while it
is still frozen, so, don't
unmold and slice until
serving time.

Carb count will depend on
the type, or mixture, of
berries, you use. As a

1 cup blackberries contains
18.4 grams carbs
1 cup raspberries contains
14.1 grams carbs
1 cup strawberries contains
10.5 grams carbs
NOTES : Counts for berries
not included in totals.
