Ingredients: 1 lb bag frozen berries of
your choice
(if large berries cut into 1/2s
or 1/4s)
1/2 cup equivelant of sugar
1 cup water
1 tablespoon lemon juice
1/4 cup cold water
1 package unflavored
24 slices Orowheat Light
100% whole wheat bread
or other light whole wheat,
thin sliced bread

How To Prepare: Spritz a standard 12 cup
muffin tin with butter
flavored Pam and put in the
refrigerator whole you cook
the fruit. In a saucepan,
bring 1 cup water, berries,
sweetener and lemon juice
to a simmer. Let cook until
berries are soft and liquid is
bright red- about 5-7
minutes once it starts
simmering. Sprinkle the
gelatin over the cold water.
Remove from heat, and stir
in the gelatin. Meanwhile,
cut the crusts off the bread
-trim as close as you can
so you don't waste too
much. Use a 2" biscut
cutter(or a glass about the
same size) and cut out 1
circle out of each slice -get
close to one corner as you
can. With the remnants of
the bread, cut 1" wide strips
-at least 1 from each slice
left over so you have 24
strips in addition to the 24
circles. Place a circle in
each muffin tin and then
place 1-2 strips around the
cup to line the entire thing.
Begin by ladeling the fruit
mixture into each of the
lined cups, then divide all
the liquid between them
-you want them very wet.
Place another circle of
bread on top and place a
sheet of plastic wrap over
the whole thing. Put a
cookie sheet and a weight
on top so it all gets pressed
down and refrigerate the
whole thing overnight. To
unmold, you can either "flip"
it all at once using the
cookie sheet as your plate
ot you can gently run a knife
(dip in very hot water first
and repeat for each one)
and gently lift the pudding
out with a spoon
individually. Garnish with
home made whipped
cream and a sliced berry.

It's hard to guage carb
counts since you don't use
all the bread (probably a
little over 1 slice per
serving) and berries vary
counts. I'd estimate under
10g each with cream and
it's a gorgeous party dish.
